Chicken noodle casserole turned out pretty decent. I think I might like it even more than tuna noodle casserole (used to be my favorite thing but the tuna doesn't seem to taste as good as years ago). I did a little doctoring to it...bit of onion and garlic powder, paprika, parsley, french fried onions, some shredded Italian cheeses, and parmesan cheese. I would definitely make it again.

I'm going to try this recipe today. Our oven is down, So, meal planning takes a bit more thinking. The new stove/oven comes on the 20th I believe.

He was in the process of preparing Julia's Chicken With Mushroom Cream Sauce when he realized the oven had konked out. Did a great job as far as figuring out how to prepare it on the stovetop. It was grand! Checked out Mrs. Brown's Boys from the 'brary. Laughing our you know what's off -- It's not for the faint of heart! He sorta took the stove apart -- igniter was toast. He replaced it within the last year so wondering if something else is going on... fun fun. Looks like we will be bringing the crockpot out (thanks for the suggestion fixitguy ) and doing more stuff on the range... ETA: wildhorseluvr, let me know how that recipe turns out as far as the stuffed pepper soup. I made my first ever recipe that I had found on the net a few months ago but wasn't totally happy with it. I have since found another recipe I wish to try.

We finished up a couple of yum leftovers tonight. Stuffed Bell Pepper Soup and a side of Stir-fried Chinese Green Beans with Pork. Made up my own recipe for the soup and am pretty happy with the way it turned out -- and more so especially after a night in the fridge.

This past week since cold weather hit has been soup...chicken tortilla soup, cream of tomato soup, and a hog maw soup (broth from a hog maw that I froze sometime ago, the usual carrots, onion, etc, plus pink eye peas, and loose sausage). I...AM...TIRED...of soup. Today's menu will be a small steak, roasted potatoes and some kind of veggie. The left over chicken tortilla and hog maw soup will be frozen for later meals.

Still waiting on our new range so we got the crockpot out. Chuck roast with the obligatory taters, carrots, onion, garlic and cream of mushroom soup as they call it.

We agreed that we would endeavor to prepare more "new to us" dishes this year. We usually go to the library's quarterly book sale and typically don't come home empty-handed. Last time we went my husband picked up a copy of "The New York Times International Cook Book" (for 50 cents) and has since marked numerous recipes he wants to try. Yesterday he marinated and tonight he baked his first ever roast. "Roast Loin of Pork au Vin Blanc", with a side of peas and Julia's risotto. It was veddy good.

Upon arriving back in KC, we stopped at Dairy Queen and each got an order of soft pretzel sticks and a shake. We ate real food earlier in the day.
Looking forward to sleeping in my regular bed. Until we get everything moved, I'm sleeping on a camping cot with an extra foam pad at my daughter's house. Not the greatest, but not nearly as hard as the one unused bed there.

Funny…those camping cots (old army style) were great when I was a kid but they’ve become extremely hard since then. I miss Dairy Queen, that’s where I used to go with my cops friends every Wed. night. Used to get the pretzel sticks once in a while. The canvas finally got rotten in them in the late 80s. Thy were WWII surplus.

My folks had some of those wooden army cots…and the green scratchy wool blankets to match. We kids ended up on them sometimes when we had overnight guests. I had 3 of the aluminum cots up until I moved, they were flat, wider than army cots and fairly comfortable. Also lightweight and easy to set up. Grandkids used them for many, many sleepovers.

I seem to be eating what's in the fridge even more than usual. I had a sandwich & fruit for lunch. Fine. For supper, latish after lessons, a boiled egg, some canned beets, the last of some multigrain taco chips, gluten-free, though that's not a thing for me. Some Greek yogurt with a spoon of jam, the last few gingersnaps, a glass of pear wine. Odd??
It might have started before I got covid, but I note that I have no interest in some of my favorite comfort foods or pick-me-ups. It's really OK that I don't want to eat chips or pretzels, peanut butter, milk chocolate, fruit-slice candies. I didn't lose my sense of taste or smell. I did have the metal taste that goes with paxlovid for a number of folks.
My chest freezer is full of stuff that needs sorted & used up. It's not that long before there will be fresh strawberries, greens, beans, or zucchinis from the garden or market.
