Whole wheat requires longer rising , and adding citric acid helps whole wheat rise. I started out ....without the internet.. I used fleishmans bread book, . I made my first sourdough bread from Eileen Gaden’s Breads Manna from heaven booklet. This is straight sourdough. If you think about it, all bread centuries ago was sourdough. 🙂my first blue ribbon came from my biscuits made from bacon grease, we had no other fat.... My second one came from Blueberry muffins made heavy cream and huckleberries. Usually just a piece would be broken off to test for texture and taste, all that was left on the plate was crumbs. The judges sought me out to tell me they had never tasted anything so good. They had no idea the biscuits were bacon grease. Yes maybe I have experience but I have never made pretzels! Amish friendship bread is definitely more cake than bread! I started making bread because I felt the store bought bread lacked nutrients. I feel the same way about white bread made at home. But if you are making plain white a cup or so of whole oatmeal adds nutrients and a pleasing taste. Barley will also offer a slightly different flavor.
Instead of sugar my sister added canned pears to her bread dough. If you can add pears , why not apples or peaches. . Almond flour will give still a different flavor. When adding other flours, usually no more than a cup should be added. Rice flour is a nice additive, oat flour is ground in your blender, I just have no fear in adding, ingredients with care .

They had no idea the biscuits were bacon grease. +++++++ We have some recovered and stored bacon grease.. A good bit of home rendered lard.. Makes a big difference in things.
It has been quite a lesson in the use of fats to go through and make recipes from our 180 some War Time Recipes collection. (WW2) Most things are just as good as modern similar recipes.. A small few just a little more bland it seems..
