Years ago my wife got a recipe for a Mexican type party dip from a co-worker, that I refer to as the calf scour dip. Having some background in dairying, I can just picture it.

A couple of items about sanitary conditions in stuff you buy.
I worked a few night shifts in a liquor store back in the early 70's, and I was amazed at how many cans of beer I had drank in my lifetime that had had the tops scampered over time and time again by cockroaches. The roaches really do not care that your mouth is going to be in intimate contact with the top of that can and I guess neither do the store owners, because I pointed out the problem of the place being infested with roaches to the owner and he laughed and reminded me that they could not drink much since the cans and bottles were all sealed.
Then there is the matter of the ice machines..... My daughter was buying a truck load of 10 pound bags of ice for her daughter's wedding reception and paused to consider she had been buying ice from that machine for a decade and did not know if it had ever been cleaned.....you see, often stores bag their own ice from their own ice machine.
She insisted on seeing the machine cleaned completely out before loading up the truck. The machine had not been cleaned out since it was new, and yielded a LOT of dead roaches and other disgusting things she did not even want to name. She sprayed down every single part with a bleach solution rinsed, pressure washed, sat it in the sun for 12 hours and finally bought the ice for the reception.
I have seen things that would puke a maggot off of a gut wagon. I threw out a bleach solution that was about to be added to a town drinking water supply that had no less than 20 dead flies floating in it, and was chastised by the chairman of the board for wasting it.
Some people just do not believe in germs or do not care.....Joe

Years ago my wife got a recipe for a Mexican type party dip +++ I was told there is a thing kinda, sorta on that theme... It is supposedly of Italian origin.. Some what a hot oil, spices, and such fondue..
Dip, fry your what ever on a stick or wire.. The more you drink, the hotter the spices and fried food.. I think it is pronounced Bun-you-cot-ah... Never tried it, but have to think it would be good, as long as your not too smashed..

Although I have three crockpots, 2 small for putting out hot party dips or gravy and not worrying about reheating, and a big one for putting out chili at a party, having worked in well-run restaurants for 9 years, I’m a total convert to the Instant Pot. Kills all germs, done in 1/ quarter to an 1/5 of the time, and it has a “keep warm” setting that actually keeps it hot enough.
Even though there are state laws at least in Wisconsin about adding to salad bars/soup bars, (will we ever have those again after COVID-19?), I also worked in a place (Captain’s Steak Joynt) where they would add the famous hot cheese dip for the chips on top of the old and stir it together. Whatever was left at the end of the day was put into the fridge to start it up again the next day. I am not sure if they ever dumped it. I never ate that stuff.
