half a dozen cast iron skillets, plus two cast iron griddles. one a big long one that fits over two burners.
My french potatoe peeler! some good knives.
old fashioned well made cranked eggbeater.
Okay, wire whisk, wooden spoons, spatulas.
Vita mix, toaster convection oven.
Everything else I do not have and do not need. Plus I have no room for anything else. My kitchen is small.

On a lighter note, the most essential thing in our kitchen is our dishwasher - me. Oh, we've got a dishwasher under the counter, but I have a dishwashing fetish. Don't leave something in the sink expecting to just rinse it out and throw it in the dishwasher, turn your back for a minute and it's in the drainer. Hey, every man needs a hobby. Why I refuse to get a dishwasher. If you have to rinse it before you throw it in a dishwasher, it is just as easy to finish washing it. Then figure in loading and unloading time, It is quicker just to wash it in the first place.

I would choose a dishwasher over a full-size oven. I loathe washing dishes!

True story...
While my uncle was in the army (and before he went to work for the boys at Langley) he was on the commo staff for Carter. He had a one bedroom apartment in Washington that he never stayed in very much. But when he was home, he hated to wash dishes. At that time, you could buy melamine dinnerware at Kmart dirt cheap.
He'd buy the stuff, use it one time and toss it...
