I'm thinking of making some pickled eggs this week. I want some that have a little zing, but not over the top. Anyone have a favorite recipe? My wife adds Thai Chili peppers to her regular pickled eggs recipe. Just puts however many whole peppers in each jar for the amount of heat she wants. The Thai chilies are hotter than the Jap chilies that many people use.

Crockpot Frito Pie
From a YT video. Layer the following: a bag of Fritos (no need to crush), a lb of cooked/crumbled ground beef, a can of enchilada sauce, 1 can of refried beans, diced onion, a can of green chilies, a packet of taco seasoning and finally, shredded cheddar cheese.
I'm not including measurements as everything is adjustable according to your taste. My crockpot was smaller than the one in the video so where she used 2 bags of Fritos & 2 lbs of cooked ground beef, I used one of each. I did use the whole can of enchilada sauce, beans & green chilies as we love those. Anyway, I'm sure y'all get the gist of the recipe.
I cooked mine on high for about 2 hrs - I recommend either cooking it on low or on high for less time as my Fritos were starting to burn on the bottom - edible but brown & chewy/tough. The goal is to get the pie steaming hot. Of course you could make the whole thing in a large casserole dish and bake it for 30 mins.

I added black beans and corn, with diced tomatoes, diced red onions, avocado, and sour cream. So good! Thank you for sharing this! 😊

One thing that I would likely do differently if I made it. Fritos in regular Frito Chili Pie are crunchy since you pour the chili, etc over them. I would fix without the Fritos and serve it over Fritos.
When I was a kid, there was a Dairy Queen restaurant near the school that we could go to at lunch. They would open the top of a small (5 cent bag at the time) bag of Fritos, add onions and/or mustard if you wanted, add a ladle of chili, and toss shredded cheese in on top. The gave you a spoon to stir and eat it with. IIRC it cost a quarter. Of course this was in the mid-60s.
