This morning I discovered I’d overlooked a ham in my fridge. 🙄 Bone-in, fully cooked, with a sell/use by date of Jan. 15. It looked/smelled normal so I baked it anyway, cooking it longer than necessary. It came out of the oven still looking and smelling normal. Do I go ahead and use it or turn it into dog food? I’m thinking it’s probably still ok. Dog is hoping I opt for dogfood.

Ok, I'll reveal a little of my past now. From childhood I've been an "expert" on food preservation, specifically how long can any food item stay good in a fridge. It wasn't a skill I sought out, but one quickly attained through sometimes voluntary service to my mom, either by request or trickery. Pork and fish deserve the most caution but are usually the easiest to discern without tasting. (I could prolly write a book on this, and it'd be both humorous AND educational, lol) From what you described, you're fine, go ahead and eat. I will say the lifespan of the leftovers might be a little shorter than you're used to but that's a topic for NEXT week. * I DO think it contributed greatly to my excellent immune system throughout the rest of my life though. Thanks Mom!

If you baked it to an internal temp of I believe 145F then you'd have killed anything bad in it.
If it tastes good, I'd go for it w/o hesitation - esp given the cost of meat these days.

I ate a couple bites several hours ago and haven’t kicked the bucket yet so I think I’m good. I’d stuck it in the fridge cause I was short on freezer space, then forgot about it. Now I can cut it up, package it in small bags and find room for it in the freezer. Definitely don’t want to waste anything nowadays. Really need to order that extra freezer.

Great. Now I can't get split pea with ham soup out of my brain................ bd 😁 You’re welcome. That’s one of my favorite wintertime soups, provided the peas are cooked to mush…don’t like semi hard bits in pea soup. I like having cooked ham/bacon on hand in the the freezer, I’m much more inclined to cook economical meals if I have head start than if I have to do everything all in one day.

I survived childhood and at 58 now, my stomach is almost bulletproof, lol. But I gotta tell this story cuz it stills cracks us up. Even though I'd told my wife how it was growing up with mom, she still is learning that I don't exaggerate my stories - at all. So one day soon after we moved in with her, mom was still doing some of the cooking. She pulls out some leftovers for dinner and gives Becka a spoonful of beans to taste after warming them up on the stove. I'm watching TV not paying much attention when I hear the sound of gagging and someone spitting up in the kitchen sink........ By then I already know what happened and start laughing. My wife was disgusted but not that mad, she just turned off the burner and threw the contents of the pot away.....but I HAD to ask anyway. "Lemme guess, she said, Here taste this and tell me if it's good" - right? LMAO

Yea, pre cooked smoked ham.....you could slice it uncooked and be just fine. It was..... smoked Back in the college days, we would get a pre cooked bone in ham and cut slices off it for weeks, cold and uncooked at home. Maybe back in 1972 you could buy a ham non smoked, or today if you buy it off the farm direct (no meat locker cuts)

I imagine a ham from a butcher shop which actually smoked hams the old fashioned way would have a much longer exp date.

Speaking of ham..... (is there EVER not a good time talk about ham??)
The sales flyer for our Grocery Outlet is showing Armour smoked ham in 9oz packages for $1.49. By my math, that's $2.65/pound. The flyer says it's 78% off.
Is that a good price? I suspect it is and even though I'm hurting for freezer space in my 5 cu ft, I'll make room if I have to.

Also 7-9 oz pkgs of Oscar Meyer lunch meats (various varieties) for $3.50. Even on sale, cheese is $2.39 for 5-8 oz. Going by prices here it appears your ham is a decent buy. *And yes, after one person has spent a week trying to finish off a ham by themselves is not a good time to discuss ham. According to an elderly friend of mine, 1 person plus 1 ham = eternity.

Thanks. I was thinking I might pick up a few packages of this since I have SPLIT PEA WITH HAM soup on the brain, plus for my ham/bean soups I like to make.
Or ham and potato...
Or ham and something else...
Or just dive into a pile of ham baby!!

I've seen a couple of really bad cases of food poisoning related to ham.
The first involved about thirty prisoners, four transported by ambulance, twenty-six on a school bus. That was bad, but all recovered.
The other case involved eight patients from a mental hospital. Two of them died from renal problems.
In the first case, the cook had served ham for supper, then left the leftovers on the counter overnight (hey, it's smoked ham, right?) and served the ham for breakfast. In the second case, a kitchen worker was not monitoring the frig and served ham that had been over temp in the frig for several days.
In both cases above, onset was within just a few hours after eating.
