what are the "humbles"? @pony , Internal meat organs eaten by the humble lower class people that is comfort food to many today.I Liver, kidneys, lungs, heart ect!

In my mind "humbles" is synonymous with "yuck". When we have our sheep processed the butcher always asks if we want them, nope.

None for me, thank you. I had far too many 'umbles growing up. My Mother was still a "depression shopper" in the 50's and 60's. Who besides me ever ate chicken feet? You gotta scald and scrape off the hide before eating them. Then there was chicken neck bone stew, meat not removed from the necks because that is "what children's tiny tongues are for". Of course, it was all boiled, and when it was put on the plate, the grease and water would separate with the grease floating on top, so if you had no apatite, you just had contests between the kids as to who could rake the largest collection of grease bubble lakes together on top of the water using your fork tines. I betcha the price of dog, cat, mink food went up a penny a can because she was buying up and hoarding all of the ingredients…. …..Joe

joebill, my Grandma made gravy from the neck and giblets. I wonder if she used the other humbles and we just didn't know about it. She was very, very good at finding a bargain.

Chicken feet washed and scrubbed Boil and the peel Keep the pot on low and simmer. They will fall apart and strain and store in the fridge to add to soup pot to make a strong broth adding the usual items Chill and the fat will be a breeze to lift of the jello like cold stock.
That chicken fat then can be used to make biscuits, or a short crust for a pot pie.
I really want a really kitchen...a Woodstove works but I miss a normal kitchen... I am limited in cooking styles.

paisley, we do save the chicken feet. Sometimes, I make that wonderful gelled stock. Other times, the dogs get them as a snack. Have you ever made schmaltz and gribenes? Heaven, I tell ya!

I'm not eating kidney, though. No matter how you prepare it, there remains the slight odor of urine. Blech.

Liver I like the rest not much but mom cooked like that and her motto was eat ,starve, it make your own and clean up after yourself, I am not a short order cook! And you have to try one bite!

My mother's thanksgiving stuffing requires the liver. I don't like it by itself, but if it isn't in the stuffing, it's not the same.
I love some pate and rumaki every now and again. In fact, with rumaki, I've tricked friends into eating liver who said they would never try it. But the rest of that stuff goes to the chickens and pigs. High nutrition, high calories = good eggs and pork.

The best stuff that came from the worst looking meat was Mom's mincemeat pie! She be rasseling with that pig's head on the dining room table all day long as it gave up smaller and smaller portions from more and more ridiculous places until it finally looked like....hard to describe it, actually, but the resultant pies and pudding were GREAT! I don't even know what was in them beyond gooseberries, raisins, sugar, meat from the hog's head, but I can still taste it just like the persimmon pie and pudding. Good beyond belief......Joe
