Anyone here make hard cheeses? I’ve been making a simple farmer’s cheese but would like to move into others. Is there a book that you would recommend that isn’t pricey and has good instructions? I like picture too! Lol. Thanks!

Thanks. I haven’t been there for years after a “person” there told me I should kill my dog simply because she’s a Pittbull and Melissa and Admins never censured him. Wrote that group off and won’t visit it again.

I won the bid on a bunch of sawlogs on Mount Lemmon in AZ years ago, and there were a few walnut trees that I knew I would not take the time to sticker and bind well enough to prevent warping and cracking, so I asked the ranger who I should offer them to for what they cost me, and he told me there was a cheese maker who coveted all of the walnut he could get to use the smoke to flavor the cheese.
He contacted the guy for me and they guy was delighted to pay a good price for them. I never new anybody smoked cheese with wood smoke for flavor. Of course I don't really know anything else much about making cheese either since I hardly eat it. All the time I was sending my mesquite dust and chips to the folks who were smoking hams with it, nobody mentioned using it for cheese.....Joe

It is to my best interests to remain a bit ignorant on the subject of foods. Growing up, the folks would not pay a nickel for something if there was a similar thing on the store shelf for 4 cents, and so other than the stuff we grew or shot there was not much quality on the table. You can imagine how hard it was to get worked up over THAT kind of cheese.
Jump forwards a few decades and all I knew was I did not like cheese nor did I eat it.....UNTIL...Janet and the kids got a package of mozzarella cheese sticks from the Schwann man and I tried one. Instantly, I thought cheese was manna from heaven, had 2 toasted cheese sandwiches for lunch every day and every evening fixed a package of those mozzarella sticks for Janet and the girls and another package for just me.
Couple of weeks later had a routine blood test and was told for the first time in my life I was WAAAAY high on cholesterol.
Easier to just quit on it than to try and regulate , so I just no longer eat cheese. I eat a pretty healthy diet with the greens and every thing, but not a heap of variety. Unless we are away from home I eat the same things for breakfast and lunch 365 days per year, with not a lot of variance in supper, either.
Either food is not all that important to my happiness or I do not want to LET it be all that important to my happiness, and whichever it is, it has worked out OK so far.....Joe

I'm lactose intolerant but I can eat quite a few cheeses, sour cream, etc, and cheese is my only real source of dairy. As long as I stay away from cream cheese, ice cream and the like I do fine. I've never had high cholesterol....
The trick to smoked cheese is to do it as a cold smoke, or at the lowest temps possible. First time I made a smoked cheese I just wasn't paying attention (maybe there was alcohol involved) and put the stuff next to a brisket or something, only to find it had all oooooooozed down through the grill....

I've made hard cheese from the regular cheddar recipe off Chickens in the Road blog. I've also used the book by Mary Jane Toth, Goats Produce Too. I've also used The Beginners Guide to Cheesemaking. Making hard cheese isn't hard, it's just time consuming.

If you really enjoy making hard cheese, I'd advise you to invest in a mini fridge. Otherwise, your fridge will fill up fast.
