I realize that mac and cheese may be old hat to most of you, but never being much of a pasta guy I've never made it. I'm trying to work pasta it into my diet for the variety, so this sounded good so gave it a shot.
The starting recipe:
Food Wishes Mac and Cheese (Full recipe)
Ingredients: 1 lb elbow macaroni 3-4 cups of grated sharp Cheddar cheese, or whatever 1/4 cup butter 1/4 cup flour 1/4 tsp dried thyme 1/4 tsp cayenne 1/8 tsp white pepper 1/4 tsp Worcestershire sauce 1 tsp salt pinch of nutmeg 1 tsp Dijon mustard 3 cups milk 1/2 cup Panko breadcrumbs plus 1 tbsp butter
Like he says in the video, varying the amount of pasta controls how pasta-like or cheese-like this turns out. I went middle of the road and did 12oz elbow macaroni and it was a good call.
As usual I can't leave a recipe alone, so I didn't use white pepper, forgot the Dijon mustard and used goat milk which my stomach tends to tolerate. I have panko but used some pepper Kettle chips I had laying around that gave me heartburn, so crushed those up for my topping.
I also added some diced deli ham, some green onion and a minced clove or two of garlic.
The only issue I had was with the gas oven here in the RV, it just didn't give me much of any browning since the gas is on the bottom and the baking dish doesn't fit down there to use it as a broiler.
But other than that, this was definitely delicious and something I intend to make again and again.

BrewDaddy , a bit of paprika is good in mac and cheese too. I don't use mustard so I don't know if it would clash with paprika. I do use white pepper in a lot of dishes though, it is excellent in potato soup! Also, your mac and cheese will be creamier if you grate your own cheese. The cellulose in the pre-shredded stuff tends to clump instead of melting smoothly.

Have never put mustard in mac-n-cheese, might have to give that a try. Made some for Thanksgiving dinner, got the bright idea to add sour cream & it got rave reviews. OK, gonna have to make a pan of it today, my mouth is watering.

BrewDaddy , Your gas oven doesn't have a "Broil" setting? It does, but the burner is underneath a built in shelf/rack. There isn't a flame on top. So the dish I was using won't easily fit underneath to get exposed to the broiler. bd
