@farmchix, A few years ago we went "beet crazy", and canned about 40 quarts. We love them, but not enough to eat them all the time. Looking at the inventory we see we're getting a little low, thanks for reminding me.

I canned in 1/2 pints Harvard and pickled. So far I have 7 and hope I will get more. Beets are good raw as well as any other way.
