I make these every so often, I usually end up eating a couple in place of breakfast (or like tonight...dinner 🙂 ).
2 small overripe bananas, mashed (approx 1 cup) 1 cup old fashioned rolled oats
Preheat oven to 350*, line baking sheet with parchment paper and spray lightly with cooking spray. I’ve used a teflon pan without the parchment paper.
Mash bananas with fork, add oats and stir. Drop heaping spoonfuls on baking sheet, to make 12 cookies. Bake 12-15 min. Until tops are lightly browned and slightly crisp. I usually flatten the cookies somewhat before baking.
You can add stuff! I always shake in some cinnamon. Yesterday I used 3 larger bananas, dumped in maybe another 1/2 c. oats, and added a good 3/4 c. sweetened shredded coconut and some chopped walnuts. Baked them a tad longer than 15 min. Yummy and more moist than usual. Next time I’m going to add dried cranberries. Some people like adding chocolate chips. But they’re pretty good as is, just be sure to use very ripe bananas...like black spots, getting mushy type.

wildhorseluvr, they sound great. Does you got any left over? Thinking it just might be worth the 150 mile drive. LOL. They do sound easy to make, I might not even foul that up too bad.
