I accidentally went to the grocery store yesterday, so I have a big roast and 2 big packs of mushrooms to cook today. I trimmed the roast and cut it into bite-size pieces. I also cut the trimmings into bite-sized pieces. I sliced the mushrooms. The game plan is to fry the mushrooms and set them aside. When they're cool, I'll put them on a tray and freeze them. Once frozen, they'll go in ziploc bags for whenever I want some. That way I can take out as many as I want and they're already cooked.
Next, in the same pan, I'll cook the fat and set it aside for the dogs. Then I will brown the meat in batches and transfer that to the crockpot. I'll deglaze the pan with coffee with a little Worcestershire sauce added, then pour that over the meat, start the crockpot, and let her go until the meat is tender. That will also be frozen in small packages, which can be thawed in the microwave in about a minute and a half. I could package it in one big bag, but it's easier to find room in the freezer for small bags.

gayle, don't know if you've ever dehydrated mushrooms, but I do that whenever there is a good sale on. Dehydrating seems to intensify their flavor. If I want mushrooms added to something I take a couple, grind them in my mortar/pestle and toss into the food. A lot of mushrooms can be stored in a small jar.

woolybear, I've dehydrated a lot of mushrooms and, you're right, they have a ton of uses. I don't know why I didn't think to buy some to dehydrate. I keep my dehydrator set up and throw stuff in it all the time. Brain fart, I guess. DIL is going to town today. I'll see if she'll pick up some more for me.

Last summer I ran out of dehydrated mushrooms so bought mushrooms whenever they were on sale and dehydrated them…I have 5 or 6 gallons of dehydrated mushrooms on hand. ☺️ (Did I ever mention I can be a bit OCD at times? 🤣 ) Grinding would definitely take up less space, but I do like the slices in various foods. I rehydrate mine before using with soups/stews or with roasts. Just soak 30 min. or more in very hot water, and be sure to add the water they were soaking in. Adds a tremendous amount of flavor. woolybear, dehydrating does intensify the flavor. I even like snacking on dried mushrooms.

gayle,I am with you on brain infarctions. I was gifted what now appears to have been 4-6 bushels of red and white onions. Out of sheer desperation (how many jars, frozen sauteed in 3 shapes and raw chopped onions can I use???) I sliced them thickly and dehydrated. Oh my stars, I eat them plain. Thought I would 're-hydrate' them and use but NO I love to munch when reading or watching TV. Good for vitamin C, very little to no carbs and they have such a sweet but spicy flavor. But I wish my brain had remembered I have 2 dehydrators before I did 20 quarts, 19 pints, and millions of gallon bags per above.
