First recipe from themotherhen FRENCH ONION SOUP 3 lbs yellow onions, sliced thin 1 Tbsp olive oil 1 Tbsp butter 1 tsp sugar 2 cloves garlic, diced fine 12 cups beef broth (I use Better than Bullion) 1 tsp dried thyme Cracked black pepper,to taste 1 loaf French bread Swiss, provolone or gruyere cheese
Heat oil and butter in large, heavy soup pot. Add sliced onions and stir, add sugar and cook over low heat with lid until onions carmelize, 45-60 minutes. Add diced garlic and cook for about 5 minutes. Add beef broth, thyme and pepper. Bring to a boil and simmer, cooking for about 30 minutes. Slice the bread into however many rounds you will eat at the time and toast in the oven until lightly browned, flip and put cheese on the bread, then back into the oven until melted. Place soup into bowl, top with the toasted cheese bread and enjoy!
If I get tired of the soup/bread/cheese I place raw chicken breast in a casserole dish, pour the soup over and bake until the chicken is done. I have also cooked less tender cuts of beef and mushrooms, covered with the soup in the crockpot, and served over egg noodles or mashed potatoes.

CROCKPOT FRENCH DIP SANDWICHES.
2 Cups Water 1/2 Cup soy sauce 4 whole peppercorns 1 tsp. rosemary 1 tsp. thyme 1 bay leaf 1 tsp. garlic powder 3 lbs chuck roast (trimmed)
Cook 6-8 hours on low or until done. Use hard rolls, or day-old French bread loaf as fresh bread won't soak up the juices.

Ozarks Tom, The mrs. made some breakfast sandwiches to freeze yesterday. We have some giant muffin tins, to copy cat the huge muffins you get at Sam's. She baked the eggs in the muffin tin, And you get nice round eggs for your sandwiches. She put one egg per hole, but you could make them scrambled using the appropriate number of eggs per muffin tin spots and divvy it up. keytomylime.com/how-to-bake-eggs/

Spam - yes Spam Fried Rice. Not bad but forgot the egg - OOPS. Don't know what caused the weird shadows since it's the first I've seen that. Estimate $1, if I had remembered adding an egg, then $1.25 bd Attachment Deleted

Estimate $1, if I had remembered adding an egg, then $1.25 bd View AttachmentA good pantry meal, except the sodium content would do some of us in. 😁 Fried rice is one of my favorite frugal meals, it’s also what I consider “fast food”. When I make rice, I frequently have pork chops the next day, saving one for fried rice. I like chopped green onions on top, so usually keep some regrowing in a small pot near the kitchen window. With the basics already prepared, it’s really quick and easy to throw together.

I made a Mexican chicken and rice skillet last night, it was really good! And very easy to make.
2-3 TBSP oil 1 yellow onion, diced 2 large chicken breasts, diced 2 garlic cloves, diced 2 cups rice 1 can diced tomatoes (I used fire-roasted w/garlic, found on sale) 1 small can green chilies 1 chicken bouillon cube (low sodium if that is a concern) Salt/pepper to taste Southwest or taco seasoning to taste
Heat about a TBSP of oil in deep pan, add diced onion and diced chicken. Cook until chicken is no longer pink, seasoning with S&P and Southwest or taco seasoning. Add diced garlic, cook for 3-4 minutes. Move chicken over to side of pan, add another TBSP of oil and rhe rice, cook for 3-4 minutes. Add canned tomatoes and green chilis, chicken bouillon, and about 4 cups water (less if not at high elevations). Cover and simmer for 15-20 minutes, adding more spice if you like heat. Uncover, taste, stir and serve. I added a bit of grated cheddar cheese but it is tasty without also.

I'm not much for Italian cuisine, but these recipes looked interesting. Moreso the 2nd link is to the yerterb channel his guest has which I believe is all Italian stuff. HAM BEER CHEESE SOUP 2 tbsp butter 4 oz chopped ham 1 cup chopped onion 1 cup chopped carrot 2-3 cloves minced garlic 8 cups peeled and coarsely chopped potatoes 3 cups chicken broth or water 1 cup beer 3/4 cup (3 oz) grated Gruyere cheese or smoked Gouda 3/4 cup (3 oz) grated cheddar cheese 1/2 cup milk (not skim)

I don’t drink beer so never buy it but this does sound tasty. Think I’ll buy a can to make the recipe and use the leftovers to make beer pancakes.
