Janet's sister used to come out from Illinois once a year and cook something horrid, serve it up and expect compliments, which I delivered as a penance for some forgotten misdeed. Had to be something I done wrong in the last 12 months, right?
Well, one year out of 20, she NAILED it. Perfect Italian beef, and we dined on it for years after, but there was a temporary shortage on one of the ingredients, we substituted, it was never right again, but recently the missing ingredient showed up again, and it is absolutely as good as ever. The great garlic and herb smell will draw a crowd from a block away and leave them stuffed and happy for hours afterwards….and here it comes.
It makes about a 7 pound roast, a really GOOD one not required, but after cooking you will need to pick out the fats and bones before serving, and shred the meat.
One combines the roast, one can of beer, one envelope of Good Seasons Italian seasoning, one of Good seasons garlic and herbs seasoning in a croc pot, plug it in, let it cook pretty much all day, if you can stand the smell that long without tearing into it.
I used to eat it for lunch on a holiday, go do some welding in the afternoon, days later when I put on my welding helmet again, the garlicky smell made me hungry for more.
At one time we had trouble finding the GS garlic and herbs seasoning and subbed garlic salt, but not the same at all.....rotsa ruck with this and lemme know, please.....Joe

Mmmm.... Saw your recipe, and all I could think was... ~*~Portillo's~*~ Too lazy to make it myself, but when we still had kids, our Christmas Eve tradition was to enjoy a feast of Portillo's Italian beef on Gonnella bread, with a generous helping of giardiniera - Marconi's giardiniera.

Now I am debating whether to make some giardiniera of my own, and can it up, or to order Marconi's from Amazon... Decisions, decisions...
