I didn’t actually make dinner last night but having bought some meat a few days ago, I baked a half ham, about half a pork loin and some boneless, skinless chicken thighs. That gives me and the dogs some meat for a few days and plenty to freeze. I have some tasks I want to work on the next few day plus a vet appt this afternoon, so easy meals will be a big help.
Don’t have any mushrooms but an omelette with green peppers, onion, ham and cheese is sounding really good for a brunch. My main meal today will likely be pork loin, sweet potatoes, green salad and applesauce. I’ll precook the sweet potato so all I’ll need to do is reheat a couple things and throw a salad together this afternoon/evening.

Been a little while since and fried chicken was sounding mighty good for dinner. Wanted to make something new to us to accompany it. Broccoli, rigatoni, sundried tomatoes, mushrooms, etc., in a creamy tomato sauce. Above pic is DH's plate btw.

A bunch of stuff mostly from the freezer turned into a really tasty stew. Stewed tomatoes & spinach. Green pepper, garlic cloves, garlic scapes & a raw onion browned in a little olive oil, then did the same to a bag of stew beef from the farm market. It came really carefully trimmed, too. Two raw carrots scraped & boiled soft. A spoonful of chicken drippings. A can of canellini beans. A little black pepper & celery seed.

DD’s sister-in-law brought Guinness Beef Tips (served over mashed potatoes) to our St. Pat’s dinner yesterday. She browned maybe 1.5# beef tips/stew meat with some chopped onion, added a can of Guinness and 1/2 c. raisins and put in a cast iron dutch oven in the oven until tender. She said it would work well in a crock pot too. Recipe called for carrots as well but she left them out as someone at the dinner hates carrots, LOL. Definitely going to try this, sounds super easy plus I can think of a half dozen ways to vary this a bit.

The alcohol does wonders to beef. I make beef stew in the crock pot adding a 1/2 cup of red wine, it's fantastic.

I decided I wanted to be FANCY today and was hungry for a cheeseburger. I fried up some onion/mushrooms and then tossed the burger into the pan. I wanted to avoid bread because of trying to watch my carbs...SOOooo I had the brilliant idea to use a big iceburg lettuce leaf in place of the bread, because you know all those social media influencers who do this stuff. Placed the fried onions/mushrooms, sliced tomato, and pickles on the leaf. Topped those with the cheeseburger with a bit of BBQ and ketchup on top. First bite into that "thing" and I shot ketchup up my nose and pickle juice down my chin. The lettuce did not contain the burger and I had condiments all over my face, but it tasted really good. The lesson I learned is "Don't try to be fancy when you're not" Next time I'll just shred the lettuce, mix in the other stuff and eat it with a fork lol.

LOL, woolybear. One of my DDs is diabetic and cannot have any grains at all, so her sandwiches are usually wrapped in lettuce leaves.

I was expecting a light brunch today at DSil’s parents’ home. Oh my word, biggest meal I’ve had in years. Turkey, ham, homemade au gratin potatoes, fresh asparagus, a very tasty potato salad, several ambrosia type salads, veggie salad, deviled eggs, fresh raspberries, fresh baked rolls, several kinds of juices and champagne. And i know I’m forgetting a few things. Numerous varieties of homemade cookies for dessert along with raspberry frangipane tart.
Even taking tiny helpings, skipping some foods and having just a tiny sliver of the frangipane I don’t think I’ll need food for a day or two. 😂

Yesterday I made up for the "ketchup up my nose" meal. Made prime rib, mashed taters/gravy, greenbean casserole. DD brought 2 cakes - coconut, and lemon (SiL doesn't like coconut, but LOVES lemon) SiL was suppose to get 1/2 cakes, but forgot and got whole cakes. So everyone had plenty to take home. We all had a great time talking and relaxing. Was myself, DD and SiL, and DS - his wife and 2 girls are in Florida visiting her mother. Even my dog got in on the feasting - I cut one of the rib bones off the roast before I cooked it and gave it to her to gnaw on while we were eating.

The first grilling of the season. 41F and a Mach 2 wind, the gas grill had all it could do to get to 450F. The T-bone steaks were grilled to perfection, along with a loaded baked potato and lettuce salad. My salad is on hold for tomorrow's lunch, I'm way to stuffed.
