We freeze a good bit, but not the classic French mirepoix. We freeze the Holy Trinity, which is onions, bell pepper and celery. I will sub a little sweet banana pepper for some of the bell pepper, occasionally.
Cuts down on cooking time...

It never occurred to me to freeze mirepoix. I may try it, but to me, there is something very pleasant about starting a dish with the Big 3.

I cook w/ the 'holy trinity' but I freeze my ingredients individually. Well, I freeze the peppers and celery, but I always use fresh onions.
