+++ I found this video, and thought in 2 things right away in the first thought... One, this is interesting, along with DANGER, DANGER, DANGER.....
The guy is canning hard boiled, peeled eggs, hard boiled in the shell eggs, raw eggs..
He has to be using a 90 minute cycle as he is canning 2 jars of raw pack beef at the same time..
Again, my thought being... This will turn into a local headline if, when they find his body..
I offered to send the link to Sweetie so she could see and comment, but she said, don't bother, nothing she wants to try.. She also saying it is being discussed on a rebel canning forum..

First, he did not put a tray between the layers in the canner. Bad practice.
I am a little disappointed he isn't going to hang on to the jars for 6 months and a year, but really, those eggs looked so NASTY! LOL
Best way to jar eggs is in brine. Pickled eggs are nice, and make good egg salad and potato salad.

Haven't watched the video, but I'm wondering after boiling, then cooking again for 90 minutes, does he need a hacksaw to cut the yolks? There are so many other ways of storing eggs I can't imagine going to all that trouble.
We've got 6 one gallon jars full of eggs stored in "water glass" right now, just as a safeguard against a disaster in our coop, or the hens all going into molt. Probably a total of over 250 eggs. They'll store like that for at least 6 months, and although the yolks will break down, they're fine for scrambling or baking.

How long did he pressure them and at how many pounds? They sound vastly overcooked. We froze eggs but usually separated the white from the yolk. They still make good scrambled eggs.
