never fixed them before, same as pork chops? Asking because they might be tender, and need different cooking? Excuse my dumb question, but I do want to know

I used a lightly greased griswold griddle. Stood over them and turned them ever so often. Brown only lightly as over cooking will make tough. Delicious!

Sorry I missed your post. I love me some lamb chops! If they're nice and thick (at least 1 1/2"), heat your iron skillet to almost smoking. Throw some butter or quality olive oil in the skillet, then the chops. You want to cook them rare, otherwise you'll wind up throwing them in the crock pot for stew. A couple of minutes on each side (depending on thickness). When you do the first flip, toss some garlic and rosemary into the oil with the chops. After both sides are nicely browned, turn the chops on their edges so that lovely fat gets nice and crispy. Let sit for 5 minutes, then enjoy.

Lamb should be at least a little pink. A lot of pink is better.

In my opinion, lamb chops are one of the final and irrefutable proofs of the existence of God! NOTHING that good could possibly be the result of a random act of nature.... The first time I had them, a friend invited me to a sort of business meeting held around an outdoor mesquite grill with him doing the cooking, and one member of the group failed to show up, so there was an extra chop on the platter....and I was watching it like a hawk all through the first one.... Did I ask permission? NOPE, just dragged it onto my plate and ate it with my eyes downcast so I would not make eye contact with the host who might indicate my bad behavior with a scowl. Was I ever invited back?....not so far, but it has only been about 5 years, so I still have hopes ....Joe
