My husband has gone sleepy sleep or I would confirm this with him - I think on occasion he just halves the recipe. One of the changes he has made lately -- as far as the chicken stock -- well, we don't have tons of that on hand (we can it ourselves and I tend to save it for special recipes/occasions) - so, what he does is open up a can of mushrooms and he saves the liquid it was canned in and uses that plus whatever water it may need for the sauce. Cannot remember the last time we had snow peas in house so sometimes he just subs some defrosted sweet peas instead. OH! And some sliced cabbage goes quite nicely in this dish!

Fresh mushrooms here are pushing 2 bucks/8oz carton (ALDI) - which I thought was high! Groceries are always fairly high here and have been climbing in price lately. It’s odd though, some products are stacked high and deep and others are scarce. Was going to buy some more canned cat food this morning...shelves have been like this for probably a couple weeks. Yikes. Ran through Aldi last night and picked up 8oz packages of mushrooms for 89 cents - I grabbed the last 4 they had. Wouldn't be able to buy them at $2 or $4 a package.
