I haven't heard of that cut and had to use the google. I would cook it down in a crock pot and separate the meat like you would in a ham hock or pig's feet and make split pea or bean soup from it.

when you butcher your own, and want tenderloin instead of pork chops, you cut down on both sides of the back bone, then you can just strip the tenderloin down and slice, while the center--or back bone is just cut into sections to suit size of family.
