We love beans and rice but I do not have a tasty recipe. Anyone out there that can help me? Thanks in advance.

jean , welcome! I just made a batch of small red beans, to go with Mexican rice and fajitas. I used 1 lb dry small red beans 1/2 small white onion, diced 2 cloves garlic, diced 1 tsp homemade fajita seasoning 1 tsp salt Twice the amount of water as beans in the pan Sort, rinse and soak beans overnight. Drain and rinse again and combine ingredients in pan. Bring to a boil then simmer with lid until soft, about 2 hours. Serve over Mexican rice or in a tortilla.

My husband happened upon this recipe and it is indeed very tasty! www.allrecipes.com/recipe/230316/hoppin-juan/Some of the changes he has made: *He has used all colors of sweet peppers but says his favorite is the red. *Seeds the jalapeno peppers. *Uses a can of black beans instead of the black-eyed peas. *He's always used fresh Roma tomatoes - usually 6 or so. (May have to adjust due to water content, etc.) *Instead of the bacon he dices up 2 smoked sausages. ~Moi
