Started like a jambalaya then he added Ro-tel and Velveeta with spaghetti! The man has lost any cajun self respect he might have possessed. Egads. I was at a Rouses earlier today. Thankfully they were frying catfish and boiling crawfish not that crazy concoction. Greta wouldn’t make it across the Louisiana border.

It just seems so abnormal. About 20 years ago my mother started cooking a crawfish fettuccine with a white sauce. I just couldn’t eat it. Crawfish should be served over rice swimming in a roux or boiled thrown out on a table in the yard. And don’t get me started on medium roast coffee. I have heard tell of Yankees and other uneducated folks drinking something they call light roast coffee. I presume it’s some kind of joke.

I lived in a place once that the local fire department would make a kind of ...bouillabaisse... kind of one pot soup, stew in pots like that as a donation fund raiser...
It was different every year depending on the donated ingredients and such.. People would line up for a bowl or with 5 liter ice cream buckets for a take home to the freezer treat..
It was always good... I would try this guys recipe in a hot minute...
