I will start, this is what sounds good to me lately:
Grilled bean burrito- Heat refried or pinto/black beans in microwave, slice onions, bell peppers and cheese. Layer beans, veggies and cheese on a flour tortilla, add hot sauce, fold tortilla like a burrito and cook in a skillet with a touch of butter until lightly browned and hot inside.
Pasta salad- Cook tricolor rotini until al dente, while cooking pasta dice up onions, bell peppers, cheese and protein(diced chicken, ham or salami works well). Mix it up with some Italian dressing and add cheese/protein to each serving.
Obviously salads rule when it's hot out. Chicken, tuna or egg salad can be prepared beforehand during cooler hours and served later.
Sliders are popular and easy to eat, especially when you serve them with sliced celery, carrots and bell peppers.

Sandwiches. Piled high with all sorts of goodness. On delicious bread.

Sandwiches, salads, scrambled eggs/omelet, plate of cooked meats, cheese, raw veg, olives (charcuterie tray?). Often I cook large quantities of meat, pasta, rice in one cook - then we eat off of that for the week. One hot cook a week is better than 7. Goat cheese and crackers with raw veggies.

I resort to salads a lot. Sometimes throw on some imitation crab, diced ham or chicken or a sliced egg for some protein. I have a broccoli salad I like to make and will eat that for dinner several nights in a row. I’m trying to eat healthier so have been avoiding some of my usual go-tos. I like stir fries, tacos, fajitas, etc…quick to cook and don’t heat up the kitchen much. Fairly healthy if you use less meat and more veggies and skip the fatty condiments. Not big on sandwiches but will make one on occasion. Crazy Dog and I shared a small bowl of popcorn and apples the other night.
Going to 2 meals a day has helped, less planning, prepping and cooking. Sometimes I just skip dinner as it’s simply too much effort…one of the advantages of being single. I’m trying to use up some things in the freezer so I’ll have room for a few freezer meals. Going to try some crockpot dinners I found on youtube that looked reasonably healthy without much effort involved in prepping or cooking.
