We have about 14-15 fruit trees in our orchard; most of which never bore any fruit until this year. Still wasn't good due to drought. Last year all blossoms froze and dropped off. Year before we hat tornadic winds and all but a few blossoms blew off.
All are over 5 years. Given that many of these trees did produce something this year, we need to TRIM the trees but there are too many ways online to figure out what will work. Re not producing before, we do have the proper mix of pears, peaches and apples that they all should produce. (This was the peach off year; last year was ok).
3-5 kinds of apple; all over 10-15 feet. We would like to get them shorter as they were supposed to be dwarf and semi-dwarf. 2 pears - same issue. 2 apples now 20 feet tall never produced but totally healthy.
So any suggestions? I though doing the "V" in the center and cutting off all shoots and such. TIA for any help you can offer. I welcome good links to websites; not much on Utube unless it is stellar. Too many just "ramble on" to quote Led Zepplin

I live in "apple country" in NC - literally. That's not the only crop though, there are peaches, pears, cherries, plums, and figs too, basically anything but citrus. After the harvest and as soon as the leaves drop and it turns cold the orchards get pruned. This link explains it better than I could. modernfarmer.com/2015/02/right-cut/#:~:text=Exactly%20where%20you%20make%20the,right%20side%20of%20the%20branch.

I'm glad someone is able to help. My answer to the two dwarf apple trees that were 8 years old without giving us even on little apple was a chain to the back of the Bronco, and a half bag of topsoil to fill in the holes.

I know, right? We started a little mini orchard at our place with some of those - apples, peaches, pears, and cherries. Once the deer finished with a few and the usual percentage of "failure to thrive" the only ones that grew great were the 2 cherry trees. Those "dwarfs" tried to overshadow the telephone pole I planted them next to! lol

Probably not helpful but interesting. My husband used to prune our trees using the rule that when he was done, it would be open enough that you could throw a cat through it. Worked pretty well.
