I cut my scapes today. I figure I will chop some and freeze in bags. Also make some compound butter with basil. Might freeze some of that too. What do y'all do with yours?
Also, I'm not sure if I'm supposed to take any outer layer off, or what..

I always forget to cut them, then have to remove the outer layer and such.
Still, they are tasty, and absolutely wonderful sauteed in butter. Mmmmmmmmmmmmmmmm..........

Ok, so the outer layer can be sorta tough, right?
I feel weird about eating the little bulbils in the thing, but have read that you just eat em. Put in garlic press, whatever.
I don't know if I have enough basil for it, but want to make some pesto too and freeze.
I have done a lot of cooking in my day, but honestly, I have never cooked or used scapes before. I figure just blend em in with whatever and taste and see if I think it's enough or not.

They are remarkably mild, yet quite flavorful.
I'm looking at the handful I have left right now. Wonder how the whole thing would take to being dehydrated... I'll have to take off the woody stems, and then free the inside from the paper-like covering, but I'm also going to dry the covers to see if 1.) they have flavor, and 2.) if they'll crumble well once dry.
This is only the third time I've tried scapes. I usually miss out.

I made the scape infused butter and put it in the fridge. Man is it tasty!
